Because the husband requested for a special dish, here's my attempt to replicate Panda Express' Orange Chicken. 😀
Ingredients:
Chicken:
2 boneless, skinless chicken breasts, cut into 1/2 inch pieces
1/2 cup of cornstarch
1/2 teaspoon of salt
1/2 teaspoon of ground pepper
1 egg
1 cup of bread crumbs
Oil for deep frying
Sauce*:
2 & 1/2 tablespoons of soy sauce
2 tablespoons of vinegar
2 tablespoons of honey
1 & 1/2 pieces of regular-sized oranges, squeezed
3 tablespoons of white sugar (use brown sugar, if available)
1/2 tablespoon of minced garlic
1 tablespoon of cornstarch, diluted in water
1 tablespoon of chopped green onion
*I really did not use any strict measurements in making the sauce. 😁 These are just estimates and may be adjusted to taste. If you want your sauce to be more "zesty" you may add an additional 1 teaspoon of lemon juice.
Procedure:
Chicken:
1. Prepare the breading for the sliced chicken breasts. Mix the cornstarch, salt and pepper in a separate container. Beat the egg separately.
2. Coat the chicken with the cornstarch mixture, deep it in the egg and coat it with the bread crumbs.3. Deep fry the chicken until golden brown.
4. Put it on a plate with a napkin to absorb the excess oil.
5. Set aside.
Sauce:
1. On a separate pan, put in the soy sauce, vinegar, orange juice and sugar.
2. Cover the pan and wait until it boils. Covering the pan will help avoid the liquid from evaporating.
3. Put in the minced garlic and diluted cornstarch.
4. Cover for another 5 minutes or check until the sauce thickens.
5. Taste and adjust to your desired level of zestiness or sweetness.
6. Add the cooked chicken to the sauce and stir until well mixed.
7. Garnish with chopped green onions.
8. Serve hot with your favorite rice or pancit! 😁
